To help inspire your weekly menu, we wanted to share some of our favourite summer salmon recipes, made using tasty, fresh Scottish salmon.
From fresh fillets to hot or cold-smoked, salmon is a really versatile food that’s quick and easy to prepare at home, and it works well if you’ve got friends round over the summer holidays.
Gin and orange glazed salmon with a beetroot and citrus salad
INGREDIENTS:
120mls orange juice
80mls gin
2 tbsp runny honey
3 sprigs of thyme
Salt and pepper
4 Scottish salmon fillets
2 oranges, segmented
400g beetroot, cooked and peeled and cut into cubes
2tbsp extra virgin olive oil
For the sauce:
2 tbsp creamed horseradish sauce
1 tbsp orange juice
4 tbsp crème fraîche
1 tsp Dijon mustard
2 tbsp extra virgin olive oil
1 tbsp finely sliced chives
To garnish:
pea shoots
METHOD:
Smoked salmon with cucumber pickle bruschetta
INGREDIENTS:
1 medium cucumber
3 tbsp white wine vinegar
1 ½ tsp caster sugar
Salt and pepper
1 tsp poppy seeds
1 tbsp chopped fresh dill
1 tbsp extra virgin olive oil
Bruschetta:
12 slices of Baguette cut on a slant
3 tbsp Extra Virgin Olive oil
250g smoked Scottish salmon
150mls crème fraiche
Garnish:
Chopped fresh dill
METHOD:
Oven baked whole salmon with tomatoes
INGREDIENTS:
1 whole gutted Scottish salmon, weighing about 3.5kg
Vegetable oil for greasing
Sprigs of parsley
1 sliced onion
2 bay leaves
Sprigs of dill
1 lemon, sliced
Salt and pepper
150mls white wine
For the Tomato Salsa:
6 tbsp extra virgin olive oil
1 red onion, finely chopped
1 red chilli, finely chopped
2 cloves garlic, finely sliced
750g fresh plum tomatoes, peeled, seeded and finely chopped
3 tbsp chopped fresh mint
To garnish:
Rocket leaves
METHOD:
Marinated salmon kebabs with fried rice and a peanut curry sauce
INGREDIENTS:
1 Lime
35ml Soya sauce
3.5g Curcuma
10g Brown sugar
3.5g Espelette pepper
3.5g Ground coriander
Zest of 1 lime
Drizzle of olive oil
2 Spring onions
30g Butter
200g Basmati rice
2 Green cardamon seeds
135ml Peanut oil
3.5g Green curry paste
135ml coconut milk
135ml Lime juice
6.5g Brown sugar
35ml Soya sauce
130g Peanut butter
